Quality food needs quality ingredients. I carefully select the ingredients for the cooking workshops and buy them at dedicated markets and Asian stores. I prefer organic products if available. Because I use rice (noodles) and coconut milk most of the dishes are dairy- and glutenfree.

Indonesian cuisine has similarities to other Asian cuisines but some key spices and herbs are only used in Indonesian cooking. Learn how to use specific combinations of ingredients to create signature flavours. Tasting mixtures and pastes and adjusting ingredients until you taste the desired signature flavour can be challenging. With my tips & tricks it will make your future cooking life a lot easier.
